Spread the joy this holiday season with these Vegan Gingerbread Cupcakes! This recipe is the *perfect* dessert to indulge while enjoying a family holiday movie night! 🎥🎄🤩 Follow along to create these delicious cupcakes at home with our special secret ingredients from Mamma Chia! 🧁✨
What you’ll need:
Cupcake
- 1 ½ cups all purpose flour
- ½ cup brown sugar
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- ½ tsp salt
- ½ ginger
- ½ tsp nutmeg
- ¼ tsp ground cloves
- ¼ cup molasses
- ¾ cup Mamma Chia Organic Unsweetened Original Chiamilk
- ⅓ cup Canola or Vegetable Oil
- 2 tbsp Apple Cider Vinegar
- 2 tsp Vanilla extract
Oven Temperature: 350 degrees
Baking Time: 20 - 25 mins
Frosting
- 1 cup room temp high-fat vegan butter
- 4 cups of powdered sugar
- 2 tbsp Mamma Chia Organic Unsweetened Vanilla Chiamilk
- 1 tsp Vanilla Extract
Step 1: Preheat the oven to 350 degrees fahrenheit. Start by whisking all dry ingredients in one bowl and wet ingredients in a separate bowl! *Our top secret step: add in your Original Chiamilk to the batter, you won't regret it. 😉*
Step 2: After whisking your wet ingredients, pour them into your dry ingredients bowl. Whisk until your batter is smooth, but make sure to not over mix!
Step 3: Place your cupcake liners in the pan and begin filling each liner until they're ¾ full. *Pro tip* Use a ladle to help fill each cupcake liner without the mess!
Step 4: Place your cupcakes in the oven for 20 - 25 minutes at 350 degrees! To check if it's ready, use a toothpick. If it comes out clean, you can remove them from the oven and set aside to cool!
Step 5: Time for frosting! 🤩 Start by placing the butter and powdered sugar in the bowl. Use a hand mixer on low to mix until the frosting is smooth and creamy.
Step 6: Once the frosting is at the right consistency, mix in the vanilla extract and Vanilla Chiamilk with a spatula until the frosting is thick and creamy. Using the vanilla flavored chiamilk will give it a rich vanilla flavor, but if you want something more subtle you can swap it for the Original Chiamilk.😍
Step 7: Once your frosting is all mixed and tasting yummy, put it in the fridge for 30 mins while the cupcakes cool down.❄️
Step 8: Now that the cupcakes have cooled down, fill your piping bag with frosting and begin decorating your cupcakes! 🧁✨
